Ingredient: 

  • 3 lasagna noodles (oven ready)
  • 2/3 cup shredded lite mexican blend (sharp cheddar cheese, monterey jack cheese and queso blanco cheese)
  • 1/3 cup shredded pepper jack cheese
  • 1/3 pound lean ground beef
  • 4 oz (1/2 can) spicy tomato & basil sauce
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Directions: 

  1. Preheat oven to 350 F / 175 C
  2. In skillet, brown the ground beef until cooked through; drain grease. Add garlic powder, salt, pepper and spicy tomato sauce. Heat through and stir.
  3. In a baking pan, pour some spicy tomato sauce on the bottom, then place 1 lasagna noodles, then sauce and Mexican blend cheese, making 3 layers total. Top with more Mexican blend cheese and pepper jack.
  4. Bake for 35-40 minutes. Let stand 5 minutes before cutting.
