- 2 lbs Potatoes (cooked and sliced)
- 1 small Onion (minced)
- 3 ribs Celery (diced)
- 2 tbsp Mayonnaise
- 3 large Eggs (cooked)
- 3/4 cup Sour Cream
- 2 tbsp Lemon Juice or Wine Vinegar
- Salt (to taste)
- Pepper (to taste)
- Paprika (for top)
- Combine the potatoes, onion, celery, salt and pepper.
- Remove the egg yolks from eggs, but dice only the whites. Add to potato mixture.
- Mash yolks and add to the sour cream, vinegar and mayonnaise. Mix well and add to potato mixture.
- Sprinkle paprika on top. Chill. Serve.
